  1. Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet with vegetable shortening or cooking spray. Cut the chicken into 1 x 1 inch strips. I've been on a bit of a chicken chip kick lately. I've been making all sorts of different kinds, but my current favorite is the braised chicken chips.

The great thing about these is that they are the perfect combination of fried and baked. They have all the deliciousness of fried chicken, without all the unhealthy fat.

To make them, you'll need:

1 lb. boneless, skinless chicken breasts

1/2 cup all-purpose flour

1 tsp. salt

1/4 tsp. black pepper

1 tbsp. olive oil or vegetable oil

1/2 cup bread crumbs

1/4 cup grated Parmesan cheese

Preheat oven to 400 degrees F (200 degrees C). Cut chicken breasts into 1-inch wide strips. Place flour, salt, and pepper in a shallow dish. Dredge chicken in flour mixture until coated and set aside.

Heat oil in a large skillet over medium-high heat. Add chicken strips to the skillet, and cook for 3 minutes per side or until golden brown.
Spray a baking sheet with cooking spray. Spread bread crumbs and Parmesan cheese on the baking sheet.
Place chicken strips on the bread crumb mixture, and press gently to coat.
Bake for 10 minutes in the preheated oven or until cheese is melted and bubbly.
